What is wrong with the expression, "That is just a theory," if by theory you mean a scientific theory?

In the case of a scientific theory, an established theory is as close to the truth as we can get in science.  A theory has a lot of experimental evidence to back it up, and should not be dismissed so lightly as the statement suggests.
